🤓 Geek Out: After spending much of his winemaking career in charge of other producers’ cellars, Pascal Potaire started his own label in the early 2000’s quickly to be joined by his good friend, Moses. Moses takes care of marketing and the front-end of the business, while Pascal handles production. Since inception, Pascal has been on a crusade to showcase the elegance and finesse of outstanding Champagne to the likes of naturally fermented sparkling wine! An obsession with balance, low alcohol, and high acidity makes the Loire Valley’s cool climate a perfect marriage for Pascal’s winemaking. A genuine cellar geek, you can find Pascal monitoring his juice and tidying his pristine cellar every day. These tedious tasks are crucial to what makes Pascal such a champion of pétillant natural wines! Because Pascal does not use sulfur additions, he meticulously monitors the fruit before harvesting them. He then ferments the juice in tank, bottles them under crown cap at the perfect mid-fermentation moment, and traps the CO₂ in the bottle to create those soft frothy bubbles that we all need more of! Deciding precisely when to bottle mid-fermentation is both an art and science, especially for a no-sulfite producer who’s conscious of stability and (lack of) bottle variation. Thank god for Pascal’s cellar intuition!
As a true negociant, Les Capriades buys most of their organic grapes from local growers near Faverolles, where the soils are composed of silex, clay, and limestone, giving the wines that crunchy minerality we all love!
