After a decorated restaurant career of 25 years, Master Sommelier, Chris Miller, left the restaurant floor and started seeking out high quality dirt. Chris believes in organics, cool climates, impeccable farming, and hands-off winemaking.
With the Seabold Cellars label, the idea is to produce Burgundy and Rhone inspired, small-lot, site-specific wines through a California lens.
Chris has strong beliefs in the Monterey Coast and its unique microclimate- cold Pacific wind currents are channeled by the Gabilan and Santa Lucia mountain ranges, creating a dramatic day-night temperature swing that provides a slow, even-ripening growing season, which of course is essential to grow the delicate, early-ripening Pinot Noir grape.
The grapes are sourced from legendary Central Coast site, Eden Rift Vineyard, which has been planted under vine since 1849! Located just 20 miles from Monterey Bay, we see a cooling maritime influence from the Pacific, and one of the highest concentrations of limestone- the highly sought after soil that Burgundy is famous for.
